Please, come to visit in Ho Chi Minh city!
If you want to have traditional Vietnamese coffee, I recommend having coffee on Nguyễn Trung Trực street - very close to Cho Ben Thanh market. In the early morning, the coffee street is full of many locals.
If you have not decided the time, I suggest not to travel in HCMC in July because it rains heavily!!!

Hi many rooftop coffee shops are very great w fresh air, great view :). There are many local markets w exciting atmosphere, shopping centre w great fixed price, local food that just exist in vietnam :). Welcome to Vietnam
Skydeck on Bitexco Building - the highest building in Vietnam- bring u the total view about Ho Chi Minh city. Shops on Dong Khơi street are great w cheap price. great coffee shops are Highland, Trung Nguyen, the one at Bitexco Building. And especially bar on AB building is rated as a bar in HongKong

Is there any day that I should avoid? Such as a national holiday that most of shops close.
No days to avoid in May or June. there's an international children day in 6/1 but it's not really a matter. Welcome to Vietnam!
