There's lots of nice hidden spots that aint included in a travel guide book such as: Hanh Thong Tay market where there are countless local food with cheap price, Café bệt in the park and so on. There's a delphinarium in Suối Tiên amusment park. It would be my pleasure to be your tourist guide.

Wow, you are interested in every famous sight-seeings of Ho Chi Ming city. You should visit them all because I'm sure it's worthy when you can explore more local hidden spots than the ones in travel books.

About seaside of your list, there is only riverside in HCMC. If you want to go to beach city, I suggest: Vũng Tàu (Vungtau beach city), Mũi Né (Muine) , Nha Trang (Nhatrang beach city), Côn Đảo (Condao island, where Brad Pitt and Angelina Jolie visited few years ago, haha).
